As the cold weather rolls in, harvesting fresh produce from the garden is no longer an option. But don’t let your hard work go to waste! Using the proper food preservation methods will ensure the fruits of your labor last long after gardening season is over. There are several options to choose from, but always remember to properly sanitize and use safety precautions to prevent any health problems.
Drying is one of the oldest methods in the book, and for good reason. Drying preserves the nutritional profile of your food and increases the flavor. It’s also cheap and saves space as the produce decreases in size. The hang-drying method is best for herbs – once dry they can be stored in spice containers to be enjoyed all season long. When most people think of food preservation the first thing that probably comes to mind is canning.
Certain vegetables are ideal for canning – be sure to use a recipe that has been tested. When water bath canning make sure to use foods that are high in acidity, such as citrus, tomatoes, and vegetables that have been pickled.
Finally, one of the easiest and inexpensive methods is freezing. When freezing, make sure to use durable, moisture and air resistant containers. The best vegetables to freeze are broccoli, asparagus, and leafy greens.
